Our suppliers
We are committed to supporting local suppliers from Norfolk and Suffolk wherever we possibly can. This is absolutely key to our whole ethos. It is a question of quality and maintaining a relationship with people who you trust. It is also a sustainable way of existing as a restaurant and in its small way helps to break down the stranglehold of large suppliers and chain restaurants. From all of our suppliers, the only non-local is Enrico from Alivini. They are an excellent, family run Italian specialist supplier and they offer us the Parma hams and other items not produced in the area.
Meat: All our meat is supplied to us by the Mutimers at Swannington Farm. Their pigs and lambs have acres of free space and live happy lives. They are slaughtered humanely at a local abattoir and it shows in the flavour and quality of the meat. One of their neighbouring farmers supplies the beef which is Aberdeen angus cross and is dry aged for at least 21 days. The chicken is free-range organic and game comes only from local shoots
Fish and shellfish: Malcolm Snelling has been a fishmonger for 50 years and his family have a long line in the trade before him. We rely on Malcolm to source fish from local docks and suppliers. He has exacting standards and sometimes we will not have what we want because it isn’t fresh enough. It just means changing the dish on the menu, more fun for the kitchen! Malcolm has a stall on the Norwich market
Groceries: Ford and Yarham, another family business provide us with the massive majority of our fruit and veg as well as a range of other groceries. Wherever possible they source from local farmers and we have been working with them since the day we opened. We do also get some vegetables and fruit direct from a local farm and from Mike and Debbs on Norwich market
Wine: Jerome Lambert of Bijou Bottles is our principle supplier along with Charles Eaton of Nethergate wines. We have an excellent relationship based on our shared passion for wine
Water and all our soft drinks: Gary from Norfolk mineral waters
Coffee and coffee machinery: Mike from Green farm estate coffee
Charcuterie and specialist food products: Enrico from Alivini
Dry goods and sundries: Anglian culinary supplies
Catering equipment and servicing: Chris and David from Catertech
